Why grease traps need regular service

A grease interceptor slows kitchen wastewater so fats rise and solids sink before the water leaves the building. As the trap fills, less of it is left to do that job, and grease starts passing into the sewer line, where it hardens and blocks the pipe.

Regular pumping empties the trap before that point. Jetting the line afterwards clears what already slipped through, and a written service log shows an inspector the trap is maintained.

Interceptor pumping

We open the interceptor, pump out the grease cap, the water and the settled solids, and scrape the baffles and walls so the full volume is available again. Small under-sink traps are cleaned by hand; larger in-ground interceptors are pumped. We check the baffles, inlet and outlet tees and the gaskets on the lid, since a broken baffle lets grease flow straight through a trap that looks full of water. Anything damaged is noted with a photo and quoted separately.

Line jetting after service

Grease that escaped the trap before service hardens in the line downstream. Pumping the trap does nothing for that grease, and it is often what causes the backup the kitchen called about. We jet from the nearest cleanout with a grease nozzle until the water runs clear, and camera the line when a kitchen has had repeat backups, so the owner sees whether the pipe is clean or has a structural problem. Jetting on the same visit as pumping means the kitchen is interrupted once rather than twice.

Kitchens are often asked to show that their grease control device is maintained. After each visit we leave a written record with the date, the trap size, what was removed and its condition. Keeping those records together in one place makes an inspection straightforward.
