What a kitchen needs from its plumbing
A commercial kitchen has more plumbing per square foot than almost any other space: hand sinks at each station, prep and three-compartment sinks, dish machines, ice machines, floor sinks and a grease interceptor collecting it all. Each has placement and drainage rules.
We plan new kitchens with the equipment layout, keep existing ones running with repairs scheduled around service, and correct items that come up on an inspection report.

Cost factors
What restaurant plumbing costs depend on
Kitchen projects vary too much for a single figure; the equipment list and the timing set each quote.
- Fixture count. sinks, dish and ice machines, floor sinks
- Interceptor size and type. under-sink or in-ground
- Indirect drains. air gaps and floor sinks
- Hot water capacity. commercial heater sizing
- After-hours work. scheduling around service
- Permits. for new or altered kitchens
Options
Under-sink trap or in-ground interceptor
| Under-sink grease trap | In-ground interceptor | |
|---|---|---|
| Capacity | Small | Large |
| Service | Cleaned by hand, often | Pumped on a schedule |
| Space | Under a sink | Outside or under the floor |
| Best for | Light grease loads | Full-service kitchens |
| Install | Simple | Excavation and permit |
| Access | Inside the kitchen | Needs pump truck access |
Grease interceptor sizing
Interceptor size is based on the fixtures that drain to it and the kitchen's flow. Too small, and grease passes into the sewer and the trap needs pumping constantly; too large or badly placed, and it becomes hard to service. We calculate the load from the connected fixtures, choose between under-sink traps and in-ground interceptors, and place the unit where a pump truck can reach it. We also connect only the fixtures that should drain through it, keeping restroom waste out.
Hand sink and prep sink code
Hand sinks need hot and cold water through a mixing faucet at the right temperature, located where staff can reach them from each station. Prep and three-compartment sinks typically drain indirectly to a floor sink through an air gap, so a sewer backup cannot reach food prep areas. We install and correct these connections, set mixing valves for hand sink temperature, and make sure indirect drains have the required air gaps that inspectors look for first on any kitchen visit.
Health inspection fixes
When an inspection flags a plumbing item, the list is usually specific: no hot water at a hand sink, a missing air gap on a prep sink, a leaking drain, a floor sink that backs up, or a dish machine not reaching temperature. We work through the list, fix what is plumbing, and tell you plainly about anything that belongs to an equipment or refrigeration technician. Many fixes can be done after close so the kitchen reopens on time the next morning without losing a service.
Local context
Working around San Jose kitchen hours
Most restaurant plumbing in San Jose happens when the dining room is empty. We book interceptor pumping, line jetting and inspection fixes for the early morning before prep or the late night after close, and keep daytime visits for failures that stop service outright. Planning the work around the kitchen's hours matters more to an owner than almost anything else on the job, so we agree the window before we agree the scope.

New interceptors and kitchen rough-ins take longer and are scheduled with the rest of the build-out.
